In the glittering lobby, you’d never guess the grand staircase wasn’t around in the days when Harold Stirling Vanderbilt and Ernest Hemingway considered the place their temporary home. The new Gin Parlour, located off the lobby, has the feel of a Jazz Age hangout, but the cocktail presentations — such as serving drinks over aromatised cracked ice and botanicals — is decidedly modern.
